Thanks to cold temperature preservation, it is now possible to maintain the chemical and nutritional properties of substances while prolonging the shelf life of products without altering their integrity.

This innovative cold preservation method gave rise to a new category of products known as “frozen foods”.

Today, virtually any type of food can be brought to the table using freezing methods. It is possible to categorize different approaches to freezing products as follows:

  1. Freezing: This method for both industrial and domestic settings. It involves temperatures ranging from -7°C to -18°C during the freezing process. While it helps preserve products, it is not a foolproof guarantee against deterioration. Freezing creates large ice crystals that occupy water-containing spaces, potentially leading to some loss of nutritional value.

  2. Deep-Freezing: Deep-freezing – very small ice crystals formed during the process – can result in the loss of food’s nutritional value. This method, often termed rapid freezing, is fundamental for managing frozen products, even with -18°C temperatures. It allows for the preservation of the food’s nutrients.

  3. Refrigeration: Refrigeration slows down the decomposition process for a few days or even up to a week. Products are typically stored at temperatures between 0°C and 10°C.
